Beta-carotene infused smoothie-bowls

The beta-carotene found in carrots maintains vision, regulates the growth of cells in your skin, keeps membranes lining your nose and respiratory tract healthy and helps control the production of proteins.

I was very much into carrots recently so here are some of my carrot-inspired innovations.

  1. Gourmet spinach smoothie bowl with blended bananas and carrot and topped with pumpkin seeds, dried mango chunks, few figs and PB2 (lowfat peanut butter powder). Yum!

2. Rawnola ( raw oats and dates), carrots, cinnamon and pumpkin seeds.

2. Cranberries (also very rich in Vitamin A) + carrot+banana

Blend the following with some non-dairy milk/or water and sweeten with stevia, raisins and a couple of dried figs.

2. Raw and easy to make pumpkin spice oatmeal

You only need a cup of oatmeal and a teaspoon of blackstrap molasses (or Maple Syrup) for the base and for the topping blend by pulsing two carrots, a celery strap (for the salty crunchiness), cacao powder, cinnamon, a splash of almond milk and 2-4 medjool dates.
